Today we are going to share how to bulk grate cheese for freezer prep and I am going to share with you how I treat it so that it won\'t stick together. I have been wanting to get away from store bought pre grated cheese. It isn\'t the best quality, it is full of preservatives and cellulose which makes it last longer and not stick together. Ounce per ounce you are paying twice as much for pre grated cheese as you would for brick cheeses. Now is the time to start grating your own. If you are like me, you would buy the grated cheese in bags that held approximately 2 cups each. I have a local grocery store that sells the grated cheese on special buy two get three free. I must admit this is very hard to pass up and in the end I pay a pittance for cheese, per pound. However the drawback is the ingredients they choose to add to the bag. I don\'t like that. Additionally, we have all discovered that grating cheese yourself, gives you a much better quality of cheese in your recipes. The hand grated cheese melts better and tastes better because it has not been adulterated with extras. I probably don\'t need to teach or demonstrate how to grate cheese. I would never insult your intelligence that way. You can grate using your box grater, which is what I do on a regular basis because I have a side that has very fine holes that I like to use. Today I am using my food processor because I want to get the job done and I want it done fast. If you don\'t have a food processor, use a box grater. It really won\'t take that long and in the end you will have the size grate you like. I am going to have to look for a fine grating plate for my food processor so I can have the size grate I prefer. Once you get your cheese grated, place it in a large bowl. The way we get it prepped for the freezer so it won\'t stick together is to toss with some corn starch! I like to add 2 tablespoons of organic corn starch per pound of cheese. I have shredded two pounds of cheese today to I have added 4 tablespoons or 1/4 cup of corn starch. I have also used my hands to thoroughly toss the cheese and corn starch together to get everything evenly distributed and all the cheese coated with the corn starch. This will help the oils in the cheese to be absorbed and the cheese will be less likely to stick together once refrigerated or frozen. I then divided my 2 pounds of cheese into 4 quart sized freezer zip top bags. You can use plastic containers if you prefer, just be sure to use a Sharpie marker to label the bags or containers so you know what the cheese is and when you froze it. Truthfully, this cheese is only going to last my family a couple of weeks because my girls like to use it for their lunches and make quesadillas. The cheese can be frozen for up to 3 months. So break out the food processor or box grater and get busy shredding cheese! I hope this gives you an idea of how you can save time and money shredding your own cheese to store in the freezer!
